The reasons are that these problems were the natural ones to consider in classical physics, i.e., in fluid dynamics, elasticity, plasticity, and electromagnetics. In quantum mechanics and quantum field theory, however, one is usually not concerned with solving boundary value problems, but with investigating the analytic properties of solutions of partial differential equations.
